Banana leaves are used as a natural receptacle for sweets and snacks and also as a wrapper for both cooked and raw foods all over tropical Asia. Because banana leaves are tough and pliable the leaves can be used for steaming, grilling and roasting. Simply line a steamer or aluminum foil with banana leaves to prepare. When used for cooking they impart a subtle grassy flavor to the dish. As a folded wrapper for desserts and other foods banana leaves are not only visually appealing but are also biodegradable. Discard the leaves after cooking (they are not edible). To prepare, rinse the leaves and wipe off before using, to remove the sap and powdery substance that naturally occurs. To make more pliable pour boiling water over and wipe clean. See a Thai recipe using banana leaves, Thai Curried Mousse of Red Snapper in Banana Leaf Cups (Haw Moek Plaa). IMPORTANT NOTE: These Banana Leaves (bai tong in Thai) are FROZEN, not fresh! We suggest receiving them immediately upon delivery and refrigerating until use.
