Grachai (Rhizome) in Brine, Double Horse, 16 oz
Grachai (also known as wild ginger, krachai, lesser ginger, kaempferia panduratum, zerumbet, boesenbergia pandurata or lesser galanga) is a rhizome with long orange finger-like roots. A member of the ginger family, it is most often used in Thai seafood dishes, because of its distinctive aromatic flavor. It is also a key ingredient in Kanom Jeen Namya.
High in Vitamin A, grachai is appreciated for many curative powers. Rarely available fresh in the US, substitute pickled grachai by rinsing and soaking in water for a few minutes before using. Grachai is also sometimes called Chinese Keys.
Store refrigerated after opening.
