Green Papaya (malagor in Thai) is most often used to make Thailand's famous Som Tum - Green Papaya Salad. Shredded green papaya is tossed in a clay mortar and pestle with fish sauce, palm sugar, lime juice and spicy chilli peppers to make a zesty salad usually served with barbecue chicken. Green papaya can also be stir-fried or sliced thinly and added to sour curry (gaeng som) or enjoyed as a snack dipped in sugar and dried ground red chili.

Green papaya is not a different variety of papaya but rather the unripe fruit of the papaya tree. When it is unripe it is eaten more like a vegetable then a fruit.
